POLSKA and Polish Cuisine

Previous Polish nights were of great success and sold out quickly, so I have decided to run another edition of Polish evening.

The focus of the evening will be on traditional Polish (Easter European) fermented foods. Food fermentation has become very popular these days in Ireland and the UK. While this trend has been sweeping across Western Europe, it has been at the heart of Polish cuisine dating as far back as the XIV century. We are fermenting almost everything we can. 

To showcase this traditional process, I will be adding at least one fermented product in each course of the meal. 
The Menu:

- Slow Simmered Rainbow Trout with Boiled Egg

- Dried Porcini Mushrooms Soup

- Roasted Pheasant with Barley Groats and Red Cabbage

- Long Braised Beef Roulade with Potato Puree and Young Root Vegetables 

- “Kajmaczki” (shortcrust cake with butterscotch) and fermented Pear

Of course we cannot forget about the wines. 
I will be paring various Polish wines (l hope I will get them) that blend perfectly with these fermented foods, as well as the rest of the meal.

T-Ancaire Gorm

Passion to cooking is something that I inherited from my Grandmother.

She spends all day in the kitchen, preparing breakfast, 2 course dinner and dessert for whole of our family every day.

Since I remember, I „help” her in her Kingdom. But when she died, I lost my teacher. But I didn’t lose my passion to cooking.

That’s why, I choose a Catering School soon as I finished primary education. It was in 1997. Since then, I step in to the hospitality industry, where I worked as a waiter, bartender, sommelier, barista, but never as a CHEF.

My cooking passion I realize in „My Kingdom” as same as my Grandmother in the past.

To go out with my recipes to the other people, I decide to organize the Pop Up events, on which I prepare 5 course tasting menu and pair them to 5 individual wines.

The Pop Up events, are very successful.  So, my willing is to make them every month.
