I have been a chef for close to 25 years. I ran the Whitfield at ace hotel and most recently I ran a small restaurant in the North Side of Pittsburgh called, 40 North. I believe that food is medicine, and when I put a menu together I think about the whole experience, not just what the food does in the mouth, but what it does for the body and the mind. I believe that quality ingredients make the difference, and since 2010 I have zeroed in on what can be produced and sourced here in Western Pennsylvania.
