John Morrissey is a senior lecturer in the School of Microbiology, UCC. He has a passion for all things yeast related. His research focuses on yeast biotechnology and genetics, but he's just as interested in the history of monastic brewing, the geographical origins of certain yeast species, running marathons, drinking strong coffee, and, of course, Cork.

What causes fermentation? Why is beer not barley water? Why is wine so delicious? Could yeast replace petrochemicals? Can fungi prevent wrinkles? What do alcohol, insulin and bioplastics have in common? Where do vaccines come from? How has brewing changed the history of Cork? How did Irish monks change Europe? Discover the answers to all of these questions and more at a fun, interactive exhibition of science and history.
