Make your own 4.5 litres (one gallon) of traditional Irish honey wine while discovering the 5,000-year story behind Ireland’s oldest drink.

Journey back to the Hill of Tara, where mead was enjoyed during the coronation of the High Kings of Ireland, and experience this remarkable tradition for yourself.

Hosted by Seán O’Connor, beekeeper, mead maker and founder of the Native Irish Honey Bee Sanctuary, this unique two-hour hands-on masterclass takes place in the picturesque village of Enniskerry at Poppies, Ireland’s Most Sustainable cafe.

No previous brewing experience is required. All ingredients, equipment and expert guidance are provided.

During the masterclass you will:

• Discover the fascinating 5,000-year history of Irish mead and honey wine.
• Learn about the vital role of bees and why they are essential to our environment.
• Taste a selection of premium Irish honeys and discover how each influences the flavour of honey wine.
• Make your own one gallon (4.5 litres) of traditional Irish honey wine (mead) to take home and mature.

Every participant will receive:

• Your own 4.5 litres (one gallon) of honey wine to take home.
• A glass demijohn, airlock and all the equipment needed to complete the fermentation process at home, so you can continue your mead journey
• A souvenir Mead Making Masterclass apron.
• A jar of premium Irish honey.

Light refreshments will be served throughout the evening.

Every booking includes a contribution to the Native Irish Honey Bee Sanctuary, helping to protect Ireland’s native honey bees for future generations.
